Green Beans with Bacon Recipe

Are you getting your Thanksgiving menus ready yet, or do you have that baby down to a science that never changes?  I know our family has 6-7 staples, but we always add three or four new items per year for fun!  Luckily this year, I am going to be with family for the first time in about 7 years.  I volunteered to make pie… so that is fun for me and easy, get it, easy as pie… I know, I wish I were funny.

Anywho, my mother sent me this great recipe she found online via A Veggie Venture.  We tried it the other night for dinner.  The dish is is beautiful, tastes great and perfect for Thanksgiving.  So I am sharing the recipe and a Thanksgiving menu printable today!

Thanksgiving Green Beans with Bacon

Serves 8

Ingredients:

1 hard-boiled egg, chopped

For the Beans:

2 quarts (8 cups) water
1 tablespoon table salt
1 pound green beans, trimmed
Large bowl ice water

For the Bacon sauce:

4 slices bacon, chopped
1 onion, chopped
1 tablespoon cornstarch
2 tablespoons brown sugar
1/2 teaspoon dry mustard
1/2 teaspoon kosher salt
1 cup whole milk
1 tablespoon apple cider vinegar

Directions:
Hard boil 1 EGG Slice with egg cutter and reserve for garnishing the final plate.

To make the beans, while the bacon cooks, bring water and salt to a boil in a large pot. Add the beans, snap them in half to make them go farther (optional).  Cook for about 6 minutes, until cooked but still bright green, don’t over cook or they will loose their beautiful color!. Drain and drop into ice water for 1 minute to stop the cooking. Drain and let the beans dry on paper towels.

For the bacon sauce, cook the bacon until crispy in a large skillet. Lift the bacon out of the skillet to drain a bit on paper towels, leaving the bacon grease in the skillet. Add the chopped onion to the skillet and cook until soft, stirring often.  While the onions cook combine cornstarch, brown sugar, dry mustard and salt in a small bowl.  Then slowly add the milk into the dry mixture.  Pour milk mixture into the skillet and bring to a boil, let cook for 2 minutes, stirring often while it thickens. Whisk in the vinegar.

To serve place the beans on a platter, pour the sauce over top. Top with bacon pieces and chopped egg.  It looks so beautiful!  And tastes great too!

    1. Carrie, I have never heard of “meat candy”. That is funny. I guess I have had it on ice cream and a maple bar. Even coated in chocolate. Bacon is good!
