Microwave Pizookie Recipe!

Have you ever had a pizookie  or skillet cookie?…  In our college town there was this fabulous pizza place called Firehouse.  Their pizza was pretty darn good, their pasta was fabulous, and if we went in it was pretty much a requirement that we had a pizookie, to wrap up the meal!  Which for those of you that are unfortunate enough to never have had one, it is a “pizza cookie”, baked in a skillet, topped with ice cream, chocolate and caramel sauce then eaten while it is steaming HOT, .

 And people, when you crack into the crust (crisp on the outside, soft in the center), and scoop up a bit of melting ice cream along with that hot gooey cookie, the heavens and your mouth want to sing.  (but remember it is not polite to sing with your mouth full! )

 Anyway… If you guys haven’t noticed I have been on a mission to create some great homemade microwave treat recipes (maybe I should be on a diet instead!)… without patting myself on the back, I must admit, I have at least two more winners for you!

And today’s microwave pizookie, will definitely be coming home with the gold metal if you try it, I promise!  So for those of you that like cookies, I am afraid that I must ask you to try this one out!  You will not be disappointed!

Microwave Pizookie Recipe

serves 2 (maybe 3 sorta stingy)

2 Tbsp Shortening ( I used coconut oil)

2 Tbsp Sugar

1 Tbsp Brown Sugar

1 Egg Yolk

1/4 tsp Vanilla

1/8 tsp Baking Soda

A Shake of Salt

1/4 cup + 1 Tbsp White Whole Wheat Flour

2 Tbsp +/- Chocolate Chips

In a small bowl, mix your sugar and shortening together thoroughly.  Add yolk and vanilla and combine.  Add salt, baking soda and flour and combine.  Pour in the chocolate chips.  Split between two medium sized microwaveable ceramic ramekins or a ceramic cereal bowl.  Microwave for 1 minute.  (Do not over do this!)  Now broil it (I used a toaster oven, for 2 minutes), this is what gives it a good crust!

Serve with a scoop of ice cream or two, chocolate and caramel sauce.  Enjoy!
