Peeps S’more Pie! 12 Days Of Christmas, Day 4

My family and I decided to have an early Thanksgiving this year, to avoid the craziness of the holiday week for 6 families, it was wonderful!  I think I want it to be the new norm, First Sunday of November is our family Thanksgiving (and I can go on vacation the week of Thanksgiving!!!)!   Of course, I signed up for making pies, because that is the MOST  fun part!!!    And If I am making them for a group, I get the fun of making pies without eating them all myself. 

I was just going to make a couple chocolate pecan pies, but then I started to think of the box of holiday Peeps that I have.  My mind began to think of what this pie could become, and of course I started thinking about s’mores.  Then I remembered seeing a fudge brownie pie online once… I don’t know who planted this evil idea into my brain, but apparently it didn’t just die, no!  The hope of actually making such a naughty thing has been waiting to surface at the exact moment when I needed it years later!  So in this moment of deep holiday dessert reflection, I realized a fudge brownie pie, not in a pie pastry but a graham cracker crust, with delicious sugar covered peppermint flavored Peep marshmallows on top would be an AWESOME s’more dessert. AWESOMENESS.

 I did not know however, how incredibly good it would really, it is TO DIE FOR! 

Fudge Brownie S'more Pie using Peeps

Peeps S’more Pie Recipe!

Ingredients:

1 graham cracker crust

1 brownie mix 

(optional mint chips)

1-2 packages holiday themed peeps ( I used peppermint flavored stars)

 

 Preheat your oven to 350 degrees.

You can make the crust and fudge brownie filling by hand if you like.   If you want a super fast project, just use the pre-made versions.  Prepare the brownie mix according to the package directions.  Gently press the dough into the crust, (try not to break up the crust when you do this!)

Bake according to the 8×8 pan directions, or for about 30-35 minutes,  BUT, don’t overcook, err on the fudgy side!  A fudge-like filling, is perfect for this pie!

When the pie is done, (toothpick inserted comes out with a few fudgy crumbs) place the Peeps of your choice around the edge of the pie.  When you take the peeps out of the package you may have two points connected, I cut the bottom connection, but the left the top one intact so it would keep them evenly spaced on the pie when I toasted them.

Right before serving, place under the broiler, set on low for about 2 minutes!  Watch it carefully, you just want a slight browning of the marshmallows.

Serve while it is hot!!

If you bake this in advance, you will want to reheat it before serving.  IF yours is in a glass pie dish great, you could try the microwave, mine was in metal, so  I put mine in a hot oven(had been 350), with the oven turned OFF while we ate dinner.  It was nicely warmed, and the marshmallows were toasted again without burning them, when we served it after dinner.
