We all love the yummy crumbly taste of streusel on top of a rich dessert. Give it a new twist with these streusel pound cake cupcakes! This recipe also makes a beautiful bundt cake.

- 2 cups sugar
- 3/4 cup butter, softened
- 3 eggs
- 1 tsp vanilla
- 2 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
- 1 cup sour cream
- 2 Tbsp brown sugar
- 1/2 tsp cinnamon
- 1/2 cup chopped pecans
Instructions
- In a medium bowl, cream together sugar and softened butter.
- Add eggs and vanilla.
- In a separate bowl, combine flour, salt, and baking powder.
- Add 1/3 flour mixture to butter mixture. Combine.
- Add 1/3 cup sour cream. Combine.
- Repeat with remaining flour mixture and sour cream.
- In a separate bowl, combine brown sugar, cinnamon, and chopped nuts.
- Fill greased muffin tin 1/3 full with batter. Top with half of streusel mixture.
- Add remaining batter and top with remaining streusel.
- Bake at 350 degrees F for 25 minutes.
Notes
For bundt cake, bake at 350 degrees F for 1 hour.[br]Pecans can be substituted for almonds or walnuts, if desired.
