Streusel Pound Cake Cupcakes

Ingredients
  • 2 cups sugar
  • 3/4 cup butter, softened
  • 3 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 cup sour cream
  • 2 Tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup chopped pecans
Instructions
  1. In a medium bowl, cream together sugar and softened butter.
  2. Add eggs and vanilla.
  3. In a separate bowl, combine flour, salt, and baking powder.
  4. Add 1/3 flour mixture to butter mixture. Combine.
  5. Add 1/3 cup sour cream. Combine.
  6. Repeat with remaining flour mixture and sour cream.
  7. In a separate bowl, combine brown sugar, cinnamon, and chopped nuts.
  8. Fill greased muffin tin 1/3 full with batter. Top with half of streusel mixture.
  9. Add remaining batter and top with remaining streusel.
  10. Bake at 350 degrees F for 25 minutes.
Notes
For bundt cake, bake at 350 degrees F for 1 hour.[br]Pecans can be substituted for almonds or walnuts, if desired.
